The Fattal Hotels chain is launching ‘Terrace’ restaurant at the luxurious Botanica Hotel in Haifa, part of the Fattal Limited Edition collection. Situated at the foot of the Baháʼí Gardens, the restaurant is a genuine highlight for residents of Haifa and the surrounding area, as ‘Terrace’ is one of the only Kosher restaurants in the area. It is open to the general public and is a chef’s restaurant combining Mediterranean flavors with Italian influences.

‘Terrace’ offers a unique culinary experience that combines flavors, nature, aesthetics and a spectacular view, without compromising on creativity, flavors, or connection to the raw ingredients. The restaurant features three distinct seating areas: a vibrant bar, an intimate and pleasant interior space, and an indoor terrace that allows for relaxed seating. The highlight is the view of the Baháʼí Gardens, which can be seen from every location. The menu is based on Mediterranean roots with Italian influences, featuring dishes made from fresh, local ingredients sourced from Mount Carmel, Wadi Nisnas, and the Mediterranean Sea, ensuring clean flavors and a connection to the restaurant’s location.

The restaurant is led by Chef Haim Dayan, who has over three decades of experience in kitchens both in Israel and globally, alongside Chef Zichu Chagab. Together, they have created a contemporary Mediterranean menu that thoughtfully combines their culinary styles, leaving a personal signature on every dish. Signature dishes include Polenta Kanafeh (Polenta crusted and baked in the oven, served on crème fraîche and truffle, Parmesan, basil, and pistachio – 59 ₪) , Sea Fish Crudo (Sea fish slices with crème fraîche, lemon sorbet, mint and chili, seasoned with olive oil, lemon juice, rice vinegar, salt, and pepper, alongside almonds, mint, and chili – 64 ₪) , and Thyme Gnocchi Clouds (Cream sauce, fresh thyme leaves, pine nuts, coarse salt, thyme crumble, and olive oil – 82 ₪).

In addition to the unique dishes, ‘Terrace’ offers a cocktail menu inspired by the connection to the local land and plants, which are harmoniously incorporated into the drinks themselves, whether through fresh leaves, edible flowers, herb oils, or local fruits. The pairing of a dish with a cocktail is designed to provide a balanced flavor experience. Examples include the Spain to Egypt cocktail (White wine spiced with strawberries, strawberry basil purée, lemon juice, and foam – 52 ₪) and the Italia Spicy cocktail (Gin spiced with chili, white vermouth, elderflower liqueur infused with grapefruit – 52 ₪).
